Ingredients
- 60 ml Bourbon e.g. Maker's Mark, Buffalo Trace, Woodford Reserve
- 10 ml Demerara syrup syrup made with raw cane sugar
- 2 dashes Angostura bitters
- 1 puff Applewood smoke
- Garnish Orange peel
Preparation
- Smoke a rocks glass with applewood chips. Place a small pile of applewood chips on a heat-safe surface or in a smoking device, ignite them with a kitchen torch until they smolder, then capture the smoke by inverting the glass over the chips for 30–60 seconds. Alternatively, use a handheld cocktail smoker clipped to the glass.
- Add bourbon, syrup and bitters with a large ice cube and stir.
- Garnish with orange peel. Use a peeler or knife to cut a wide strip, avoiding the white pith. Twist it over the drink to release the oils, then drop it in.
