Penicillin Royale

Ingredients

  • 30 ml Blended Scotch e.g. Johnnie Walker, Famous Grouse
  • 15 ml Lemon juice
  • 15 ml Honey-ginger syrup
  • 60 ml Champagne
  • 7.5 ml Islay Scotch e.g. Laphroaig, Ardbeg, Lagavulin
  • Garnish Candied ginger

Preparation

  1. Shake Scotch, lemon and honey-ginger with ice.
  2. Strain into a flute. Don't know how? Pour the drink through a strainer (or the built-in strainer on your shaker) to catch the ice and any solids.
  3. Top with champagne.
  4. Float Islay Scotch. Don't know how? Pour slowly over the back of a bar spoon held just above the surface so the liquid sits on top rather than mixing in.
  5. Garnish with candied ginger.

The Penicillin Royale is a modern twist on the classic Penicillin cocktail, which emerged in the early 2000s in New York City. This variation incorporates Champagne, elevating the original drink's smoky Scotch profile with a sparkling touch.
